Adzuki Beans
Adzuki beans are cooked fresh or dry and have a mild nutty and slightly sweet flavour. The dried beans are commonly soaked and then boiled for use in a wide variety of dishes. Adzuki beans with sticky rice, known as sekihan, is traditionally served on festive occasions in Japan. Dried beans are often processed into a starchy flour used in cakes, confections, porridge, or soups.
